Flinders Truffles

Flinders Truffles, near the seaside town of Flinders on the Mornington Peninsula in Victoria, was established by the Groves family in 2017. Unafraid of hard work Tony, who’d worked managing car dealerships, and Jane, an interior designer, were ready for the challenge of applying regenerative farming practices to restore land used over years as a naturally fertilised cattle stud to a thriving truffière of 1,200 French (Quercus Ilex) oak trees. 

Sitting on rich dark brown clay loam that transitions to medium heavy clay, the restoration involved breaking up soil compacted over years by roaming live stock and adding lime to create the ideal conditions for truffle production.

All trees are nurtured and pruned by hand to ensure clear trunks and the correct canopy size to assist the balance of light and shade on the all important soil. The gentle gradient enhances drainage, with 1200 Quercus Ilex planted on mounded rows. The irrigation system is evolving from traditional sprinkler heads to efficient drip lines, ensuring consistent moisture while conserving water.

With hot summers and cold winters, the location is proving ideal for growing high quality Tuber melanosporum.




Tony and Jane’s truffière is growing with 150kg of beautiful melanosporum harvested in 2024. With their three children and truffle dogs, Lagottos Lucy and her nephew Enzo as well as Herbie the King Charles Spaniel, they run the truffle orchard, and offer boutique truffle-hunting experiences as well as winter farm gate delights including truffle soups and toasties. 

They are happy to invest the necessary time and patience as the delicate process of mycorrhizal activity unfolds beneath the surface.
