Golden Sterlet 

Acipenser ruthenus, commonly known as the Sterlet sturgeon, is a small, intriguing species of sturgeon that inhabits freshwater rivers and lakes across Eurasia. Despite its small size compared to other sturgeon species, the Sterlet holds a special place in the world of caviar production due to its unique characteristics.

This golden or albino variation of the Sterlet caviar is rarer still. These small albino sturgeon rarely exceed 10 kg in weight and can only exist in deeper, protected waters to avoid exposure to sunlight. The fragility of this species makes it extremely rare. At least 8 years are required to obtain the treasure that is Golden Sterlet Caviar.
